What Is Ghee?

Ghee is a traditional Indian food that has been around for thousands of years that is regarded as a supreme health tonic by Ayurvedic practitioners.  It is quite simply, clarified butter. It is made by simmering a butter on a stovetop until the milk fats, water, and any other impurities migrate to the top and bottom of the pot.  These solids are then filtered out of the butter, removing the lactose, leaving only the oily remains of ghee. When warmer than room temperature, ghee is liquid, otherwise it is solid and it is fine to use it either way.
